Vyn means view, and Daniel Berlin’s simple, elegantly sophisticated new restaurant in the very southeastern corner of Sweden has wonderful views over gently rolling landscape, all the way out to sea. A reimagined stately former farm on the crest of a hill with a vista of the Österlen countryside and the Baltic Sea, it’s surrounded by 18 acres of land running right down to the water’s edge.
Daniel closed his two-Michelin-starred Daniel Berlin Krog in September 2020, one of Sweden’s most respected and beloved restaurants. This new space is a forever home for Daniel, a chance to build on and perfect the experience from Skåne Tranås while adding elements that weren’t possible previously. There’s a casual, intimate food & wine bar, which has been quietly open since July for walk-in guests; the main restaurant, opening in October, which includes a private area for up to 24 guests; a boutique hotel with 15 bedrooms, including two generous suites; and the lush fields and orchards of the surrounding grounds. There’s also the opportunity for adventures in all directions, being just a few hundred metres from the water, with walks and hikes on the doorstep.
“This place is a joy for me,” says Daniel Berlin, “as we have the chance here to take the long view, growing what we do with an almost endless sense of possibility. Vyn is really all about this place, the very nature of it. Exploring the full potential of it, creating something authentic and in harmony with its essence and setting. Working with our family of local producers to offer something true to ourselves, reflective of where we are. We get to give our best view to our diners, both from the window and on the plate.”
A blend of classic Swedish vernacular architecture and clean modernism, the interiors are minimalist but warm. Muted shades of silvery grey, oatmeal and pale green echo the tones of the surroundings, with textural contrast from natural stone and wood. The handsome open kitchen has a view directly into the spacious lounge. The main dining room seats 30 and has dramatic extra-large windows framing the ever-changing light over the sea and sky, presenting those views as a moving artwork.
The main restaurant will serve Daniel’s focused and precise seasonal menu — honest, local produce from a larder he knows like the back of his hand. Following the seasons with clarity, originality and boldness, Daniel makes the absolute most of every ingredient — growing, foraging or hunting many of them himself. Being so intimately familiar with every element means these are deeply personal dishes.
The private dining room is upstairs under the eaves, below the massive wooden gable roof of the barn, pierced by a huge window that floods the space with light and a constant view of the sky. There’s also an internal window, overlooking the main dining room below. There are two different menus available here — the tasting menu and a five-course seasonal menu.
The food & wine bar is in a second building, a cosy and intimate space with a lovely outdoor area for sunny days and warm nights. A leaf-patterned ceiling reflects the greenery all around it, and guests will recognise the comfy tables and chairs from Daniel Berlin Krog. This is where those staying in the hotel will have breakfast. The food & wine bar is a casual gathering spot for locals and walk-ins alike, serving an à la carte menu of seasonal snacks and dishes. This menu changes often and is closely connected with that of the main restaurant, designed to work together to respectfully use all aspects of the locally sourced produce. There’s an intriguing list of wine, beer and bubbles by the glass and a fine bottle bar selection.
“Vyn is a place to come and breathe,” says Daniel Berlin, “a place for me to put down roots and to continue to grow. We have really missed our guests. I can’t wait to welcome people here to share the calm and beauty of this special part of the world. It’s a chance for me to do what I love in the way I think it should be done, and this makes me very happy. I hope it makes other people happy too.”
