
The perfect flavour for me is the one that takes you to your deepest memories and makes you feel delighted – a flavour with a soul.
I aspire to the sublimation of the products so I try to keep the flavours as simple or stacked together as possible.
One of my favourites is certainly flavour of a real tomato when I pick it directly from the plant and taste it. This reminds me of my grandfather’s garden in Argentina, where he took pleasure in helping us discover the flavours of all his vegetables.
