
This is a hard question as I don’t really have a favourite flavour – it depends on so many factors and it changes constantly.
What I really like is using vinegar and citrus when finishing a dish to give it that beautiful final lift.
At Anglo we always have a couple of infused vinegars, soy sauce, and a beautiful choice of infused oils. I love to play around with fruit based vinegars on the desserts – I am not really into sweet things and I find these vinegars to be a great way for balancing the sweetness.
I also like the simplicity of smoke as a flavour – it’s really identifiable and adds real character to the dish.
