
I often get asked about my favourite flavour or ingredient, but it’s very hard to choose one because it changes daily. As seasons come, I am excited about the new ingredients of the season, and at the end of that season, the excitement for the next one is already on the way. Seasons aren’t very rigid and are dependent on so many variables, so ingredients come and go and we are very lucky to have a constant stream of new things to keep us happy and busy. The one that really gets me, though, is Jerusalem artichokes. I truly adore their nuttiness, the deep earthy flavour, and how it subtly they changes whether they are roasted, baked, fried or creamed. I think they are one of the most unique tasting vegetables and every year I am looking forward to the first delivery of the beautiful knobbly little things.
