One of my favorite flavours is what I call “the flavour of my memory”. It is the flavour that brings emotions or memories back to life even with eyes closed.

My most precious memories are related to my childhood at the family house where I used to spend whole days with my grandmother between the family garden and the kitchen stove. She was an old lady who loved to cook and take care of her grandchildren. I have wonderful memories of eating her delicious dishes which were an expression of her deep affection towards us – I am sure that this love which she transmitted when she was cooking made them even more special. For this reason, when I am finishing a dish, I always choose the path of love and deliciousness which can only be created when we cook with our soul.
