When I think of my favourite flavour my thoughts take me back in time when I just started cooking and was wondering when and how would I find that perfect flavour and what influence will it have on me.

Now, twenty years later, I can say that the flavour I love best and which pairs perfectly with harmony and equilibrium, is creativity. I am discovering new aspects of it every day at work and at home. It constantly makes me think of new shapes and flavours. My passion pushes me to go beyond things that have been done already and to be playful with a great respect for the past while looking into the future and living today.

Favourite flavour for me is in complementing basicity with acidity and strong flavours with delicate ones; it is dedication and care and a message to my guests: “I really want you to feel good.”
