My favourite flavour has to be juniper. In Poland where 30% of the country is covered with forests, juniper is something as a signature. I use it in different dishes starting with rhubarb/herring/juniper over cabbage /goat’s cheese / juniper to dessert like aubergine /wild strawberry/ juniper. Despite working with very seasonal products I always find a space for juniper according to my calendar of nature – each time in a different form – green juniper berries to make juniper oil, needles for smoking and dark berries to infuse juices and deglaze with them …. Forest!
